How To Make Kelwele Fried Plantain Cubes
If you are not familiar with cooking plantain, it can be cooked with the same method as potatoes. Plantains have many functions and can be cooked either boiled, grilled, baked, fried, mashed, or even eaten raw. Kelewele is a Ghanaian delicacy that is easy to make. Plantain is just like banana's however as they contain more starch it is advisable to cook them prior to eating. Plantain is useful in its contents for instance it is a source of fiber, potassium, and vitamins A and C.

Ingredients
- 3 ripe soft plantain almost going off
- Coconut oil or any other vegetable oil
- 1 chili
- salt (pinch)
- 4 cloves garlic
- 1 ginger (medium size)
Method
- Peel your plantains
- Slice each plantain into two lengthwise
- Slice each side into two again to make four long plantain splits
- Chop into cubes
- Blend your ginger, garlic, salt, and chili together with some coconut oil to make blending easier.
- Mix your ginger paste and plantain cubes in a bowl
- Heat your coconut oil for about 4 minutes on high heat till it is hot before dropping your plantain cubes in
- Fry till plantain browns but be careful not to burn it, if the heat is too much turn it down just a notch
- Scoop your kelewele into a colander to drain away excess oil
- Your kelewele is now ready to be served
Notes
If your cubes are too small they will absorb a lot of oil making your kelewele too soggy and fatty. Chop your plantain cubes into large-ish sizes to avoid this. You can replace coconut oil with any other oil you prefer to cook with such as tallow, lard, or vegetable oil.
